One of my favourite meals has always been soup and fresh warm bread. It was definitely my staple thing to order when i went to a cute little tea house for lunch. Since going gluten free, bread just didn't seem as appealing and soups are always a concern with all sorts of hidden ingredients, at least at restaurant soups. One of my ultimate favourite soups has always been the Zuppa Toscana soup at Olive Garden. I always ordered it and sometimes had two bowls before attempting to eat my pasta dish. I was so happy when i accidentally stumbled upon a food blog that had a copy cat recipe for this soup. I made it as soon as i could and i can say that i was not disappointed one bit. Yummy! The recipe for the soup isn't necessarily gluten free as is but just make sure your ingredients are if you need to make it that way.
As for the bread? In the nearly three years that i have been gluten free i have never attempted to make my own bread. I guess i was just scared by all the disappointment that i had heard from everyone else who tried. I had a few recipes saved to try one day and then i found one two weeks ago that looked simple and i finally decided to give it a go. The bread turned out really good. Texture of course is not the same as regular wheat bread but i am used to that already. The flavour was lovely and it was so wonderful to have a nice think slice with melted butter to dip in my soup :)
