Yes, i am posting this at 10:45pm on a Saturday night and these did just come out of the oven. I don't normally make cookies at this hour but our church is doing a 'blind date" type meet and greet lunch tomorrow. You sign up to either host or be a guest at someones house for lunch. If you are a host, you make a simple meal of soup, buns and cookies. Thus the reason for my late night cookie bake. This was my first time making these cookies and i can definitely tell you that it won't be my last! As per usual, i got this recipe off of my favourite gluten free cooking/baking blog The Baking Beauties. I just couldn't resist them because of their yummy peanut butter middle. Peanut butter is definitely one of my major weaknesses and that isn't even due to pregnancy! Its just all the time :) If i could have a peanut butter cookie, with a peanut butter middle, that was dipped in peanut butter, i would, lol. But i guess that would just be a peanut butter cookie...hahaha. Anyway, try them, love them and bake them for a friend :)
As for the rest of the meal? I made the Italian Sausage, Potato & Kale Soup from one of my recent posts and cheated on the buns (store bought). I can't wait to meet my mystery guests!?!?
