I made this soup for dinner tonight to accompany the delicious enchilada recipe that my good friend gave me. I will not share the enchilada recipe online as it is not mine to share but this soup was found online so it is free for me to post. It is one of the easiest things i have ever made and Nolan ate it with a little brown rice tossed in to his portion.
Black Bean & Salsa Soup
(Serves 4)
1 (15 ounce) can black beans, drained and rinsed
3/4 cup vegetable broth

1/2 cup chunky salsa
1/2 teaspoon ground cumin
2 tablespoons sour cream
1 tablespoon thinly sliced green onion
1/2 teaspoon ground cumin

1 tablespoon thinly sliced green onion
Toss the black beans, broth, salsa and cumin in a food processor or blender until smooth. Transfer to a saucepan and heat on medium until thoroughly heated.
Ladle into bowls and top with a dollop of sour cream and a sprinkle of onion greens.
