For some of you who have asked, here is the flour mixture that i use for all my baking. It was given to me by a friend, so i can not take any credit for finding it. It seems to work for everything that i make.
Gluten Free Flour Mix
2 cups brown rice flour
2/3 cups potato starch
1/3 cup tapioca starch
Sift together or mix in a ziploc bag or air tight container really well so that it combines. For every cup that you use in a recipe just add 1 tsp xantham gum to help bind the recipe together.
