Gluten Free Pizza Crust

This pizza crust recipe is the same one my mom always used and therefore i continued to use it.  Since going gluten free i tweaked the recipe to work with the gluten free flour mix that i use.  I think it is delicious ;-)  Try it with prosciutto, lightly steamed spinach and goat cheese.  You'll be pleasantly surprised!

Gluten Free Pizza Crust

3/4 cup warm water
3/4 tsp sugar
1 tbsp active dry yeast
3/4 tsp salt
3 tbsp olive oil
2 cups gluten free flour mixture (approximately)

1. Measure into a mixing bowl the warm water and stir in sugar. Sprinkle with yeast and let it stand for 10 minutes. Then stir well.
2. Stir in salt, oil and 1 cup flour. Mix until smooth.
3. Then add flour as needed to get the consistency of pastry dough. The dough should not be soupy or super sticky.
4. Separate the dough into two sections and place on lightly greased pizza pans. This recipe should make two round pizzas. It is normal for the dough to be slightly sticky. Roll or press dough as thin as you want.
5. Top with your favorite sauces and toppings.
6. Bake at 400 degrees for 25-30 minutes.
7. Cut, serve and enjoy!
